菜切り包丁 鋼製 両刃 仕上げ研ぎ済 やや小ぶり

菜切り包丁

やや小ぶりの菜切り包丁です。
材質は鋼ですので濡れたまま放置すると錆びます。
ネットで購入して、自分で全体を磨き、砥石で研ぎ上げたものです。
今回の出品にあたり天然仕上げ砥石で研ぎ直しました。
刃を研いで分かったことですが、よくある割り込み包丁などですと、切り刃を研ぐと真ん中の硬い鋼と挟んでいる軟鉄の境目が浮かび上がってくるのですが、この包丁は全く境目が出てきませんでした。
おそらく全鋼(包丁全体が1枚の鋼)と思われます。
全鋼と言いましても料理人が使用する高級な打刃物ではなく、鋼材を包丁の形に型抜きして、刃を研いで包丁にしたものと思われます。
一般的な家庭用のステンレス包丁と同じ構造で材質が鋼というものだと思います。
材質が鋼であり、刃が薄く、仕上げ砥石で研ぎ上げていますのでかなり切れます。
サイズも小さめで小回りが利き、普段使いにはいい包丁です。
ただ、鋼なので錆びやすく、使った後の水気取りや保管には気を使いますので、それが面倒な方には向かない包丁です。
昔はあまりステンレスなどがありませんでしたので、祖父母の家にあった包丁はこのようなものだった記憶がありますが、そこそこ錆びていた気がします。
錆を気にせず使うというのもそれはそれでありかもしれません。
菜切り包丁は、昔は一家に1本ありましたが、最近は三徳包丁が多くなりお持ちでない方が多いと思います。
しかし、使ってみるとやはりキャベツの千切りや野菜を刻むなどのときは切りやすいです。
中古品であること、刃を研いでいることをご理解の上ご購入お願いします。

Air freight: If the arrival notice exceeds seven days and the status of the goods is not confirmed, a customer complaint will occur and the seller will not be able to report it.
